Things I love about today...

Today is a good day. It's a normal day, woke up, showered, got babybear up, took her to daycare ( and she was happy!), went to work, had a couple home visits and had an Easter egg hunt with the kids at Head Start, got Babybear, and came home. Ordinary day right? Right, but I feel good! ( I always want to sing that "I feel good dananananana") just me? Am i weird? Anyway, Im really loving my new job, I love our new home, I love our gym(which I started back into this week), and I love my family!
Here are a couple of highlights throughout my day....a little boy at Head Start told me he loved me, I wore my comfortable shoes all day, I got my sewing machine hooked up, and I had a complete stranger compliment me on my purse. When I told her I made it, she asked for my info. She may even read my blog, Hi!
Well, I just wasn't in the mood to cook tonight so I decided it should be a pizza night! Thin crust pizza, fresh fruit, and a salad. I love these kind of dinners; simple, somewhat healthy, and delicious. The only thing that would be better was if the hubs was home to share it. I miss him when he works. I hope every married couple is as happy as us:)

Making memories

I had lots of plans on getting stuff done today, but not a lot happened...what did happen was having a great time hanging out with my parents and the princess. We went to rural king and saw hundreds of baby chicks! (I really want a baby chick, they are sooooo cute! The chicks were only $1.50 but a cage for the chicks was $150, go figure. ) Well, the princess had a great time with grandma and grandpa. I got some unpacking done, and we grilled out twice:) I love this weather. As I was unpacking, the princess found her princess tutu and had to wear it. I love how she has a unique little style of her own. She was determined to wear this tutu, along with a hoodie, and Elmo socks. Punky Brewster anyone?

I am having crafting withdrawal, hopefully I can get my craft room organized an unpacked this week so I can work on some projects. I'm thinking of starting up an etsy site soon...comments? Advice? Other options? Email me or leave your comment below. I would love to hear from you :)

Moving adventures!

WE ARE MOVED! Woohoo! I hate moving, it's quite possibly just as bad as putting in a car seat. ( which I have to go get certified in and spend four days in Seymore Indiana) ( I may chop off a finger to get out of that one:/.) Anyway, back to the moving part, we started around 8 am yesterday morning after spending about two weeks packing. My parents picked up babybear to take back to their house to play, my brother helped move and my father-in-law(who is an expert at packing Tetris style) came to help too. We were supposed to get a 26'foot truck only to have gotten a 20' one. Holy moly that is a big difference in the wrong direction! A few hours loading everything in and we were off to the new house. My brother had to leave early for work and babybear came home. My parents took her to the flower shop and she got me flowers for my birthday (although she thinks they are hers:) She is the sweetest thing ever! We are gradually getting things put away, but it's a process. Good thing my hubs and I are a good team! (love you hunny)

So, there are three things that I learned while moving; 1. We need to dust and vacuum a lot more! (Gross!) 2. Label Everything!!!!! Like every box and what is in it. What the heck were we thinking? I went through every box just trying to find pizza cutter, only to find it this morning. 3. Don't move again for a long time! We moved less than a year ago and it sucks! We are planning on staying put for a while though.
And as an extra one... #4. Be Flexible! We had to buy a dryer converter, lots of organizing stuff and who knows what else.

What was that??? Tomorrow???? Yes, your right, tomorrow is my birthday!!! Woohoo! I'm officially in my 30's. (that's 31 if you didn't know.) I got a new license that is horrific and my body aches :) just kidding... Life is GOOD!!!!

I uh (love) Mama!!!!

So if you know me on a personal level, you may know that my daughter has apraxia. Apraxia is a speech delay/disorder that happens in children and can happen to adults. You can learn more here at http://www.asha.org/public/speech/disorders/childhoodapraxia/ if you are interested.

Because our little princess is apraxic, she does not speak like most children her age, she does not express herself like others, and she has never been able to say "mama"........Until tonight!!!! ( I am smiling from ear to ear right now) while putting the little princess to bed, we always say "I love you" and she repeats "I uh (love) bwa bwa or da-da" but never ma-ma. She will be 3 in May and I've been waiting to hear the words "ma-ma" since she started babbling. It's been a long wait but well worth it! I started crying and my hubs and I were thrilled to hear her say " I uh ma-ma"!!!! She is such a sweetheart and she is growing so much everyday! We are so proud of her accomplishments with her speech (and everything she does) and she tries so hard everyday! Our little princess is a dream come true and I look forward to more words and accomplishments in the future.

Chorizo bake

My hubs had two very long days at work so the little princess and I decided to make him a yummy breakfast and let him sleep in. What to make...what to make.... Chorizo bake? Yep! I had some chorizo in the freezer that I thawed and got the bisquick out, eggs,milk and cheese. That's it, that's all you need. (unless you are like me and use lots of seasonings.) The princess played, while I cooked the chorizo and enjoyed a yummy cup of coffee. I love my coffee, any coffee, I just need my coffee! Thats not a problem right?
Back to the baking... After I cooked the chorizo, I soaked up as much grease as I could with 15 paper towels. (Maybe more) I layered the chorizo in the bottom of a baking dish, topped with lots of cheese, and poured the bisquick mixture on top. ( recipe and pics to follow) pop in the oven and 25 minutes later you have a Mexican inspired breakfast bake. I finished my homemade salsa while it baked. I also played with the princess and her dolls too:)!

What did you have for breakfast?

Chorizo bake

1lb (or package) chorizo or Breakfast sausage
1 cup shredded cheese (or more:)
4 eggs
1 1/2 cups of milk
1 cup bisquick (I used heart healthy)
Seasonings of your choice (I use garlic, Italian seasoning, pepper, and hot pepper flakes)
Cook chorizo or sausage until done, strain as much grease as possible, and layer in the bottom of a baking dish. Top with shredded cheese. Mix eggs, bisquick, milk, and seasonings in a bowl. Pour over sausage and cheese and put into a preheated 350• oven. Bake for 25 min or until fork comes out clean. Serve with a side of salsa and some yummy fruit.(for nutrition of course) Enjoy!!!!
